Fun with Falooda special!

Falooda is a popular dessert in India, Pakistan and Middle East. It is served as a Ice Cream Sundae Float in India and it has basil seeds, falooda sev, rabdi, rose syrup and kulfi or ice cream. Basil seeds are also popularly known as chia, subja or tukmaria seeds.

Preparation time: 15 minutes

No. of servings: 4

Ingredients:

Faloods sev – 3/4 cup (recipe below)

Basil seeds or sabja or chia seeds – 1 tbsp (soaked a cup of water for an hour)

Rabdi – 1 cup (recipe below)

Vanilla ice cream – 1/2 pint (or 1 scoop for each cup)

Rose syrup

Toasted nuts for garnishing (optional)

Method of Preparation:

Preparation of rabdi:

Milk – 3 cups

Sugar – 1/2 cup

A pinch of cardamom

A few saffron strands

Boil 3 cups of milk over medium heat in a pan. Lower the heat and let the milk reduce to 1/3 rd of the quantity stirring frequently.  Add sugar little at a time and check for sweet and add more. Finally add a pinch of cardamom powder, few saffron strands(optional).

Falooda Sev:

Keep a bowl filled with ice and cold water. You can use sev maker for making these.

Mix 1/2 cup of corn flour with 1/2 cups of water and make a smooth mix. Add one more cup of water to the mixture. Heat a wide pan over medium heat and add this mix. Stir continuously and cook with forming any lumps. When it becomes transparent, stop cooking.

Add this to the sev press when it is piping hot. Press and squeeze the sev into the cold water and let it sit there till you use it for the falooda.

Making Falooda:

Fill serving glasses in the following order:

Add some falooda sev or noodles which serves as the bottom layer.

Add 2 to 3 tbsp of rabdi on top.

Add a tsp or 2 tsp of rose syrup depending on how strong you like the flavor.

Add 2 tbsp of soaked basil seeds or subja and a scoop of vanilla ice cream.

Add a few drops of rose syrup on top. Garnish with toasted nuts.

Judging by the teaser, it is clear that they drew inspiration from Marky Mark and Kate Moss’ iconic shoot from 1992 — and we can’t get enough of it. Despite the photoshop controversy behind the overtly air brushed “bulge” of Justin’s and the comical GIF by music site “Breatheheavy.com” which did quite the rounds, Justin’s team claimed the so-called “unretouched” picture was fake and sent a legal notice to them asking to print a retraction. The photos were removed from Breatheheavy.com and editors issued a statement on the site which reads, “We sincerely apologize to Bieber for the hit to his ego and to the millions of tweens on social media we upset…” Though people know the actual truth we found Ellen DeGeneres’ version to the issue actually hilarious and simply brilliant!

Bottling her spirit

You could like her, dislike her or even feel how on earth is she where she is– but the fact of the matter is that in her own words, ‘’I receive Grace with Grace.’’  Focused, driven and an uncompromising desire to finish what she sets out to do, is what makes  Krithika Subramanian,  a symbol of success in the most accepted manner. Chithra Mahesh listens to her in an up close interview with the talented danseuse.

That, many successful people will tell you, is the baseline for what they achieve in life– money, adulation, attention and everything that goes with people sitting up and taking notice, has its foundation in the acceptance that there is the hand of the Divine in all that they do and that they are only following a given script laid out for them.  Of course, the hard work, commitment, an eye for the minutest details, a disciplined way of life and adherence to excellence, are factors that cannot be undermined. Yet the attitude of doing and then leaving the results to however they may shape up is the defining part of the persona seeking to fulfill the potential to the maximum.

A highly successful architect and designer (Shreshta, Sumanth and Co, Transform, Namaargam Dance Company) who have returned to dance like the prodigal daughter after a long hiatus, Krithika is making news now with her reentry into the dance world. She has turned choreographer, producer, facilitator, and collaborator and has roped in no less a person than Illayaraja to score the music orchestration for a script written by her–Swappanam is the dream and this dream fructified recently with a lot of glitz and glamor.

‘’The script is actually about disjointed dreams,’’ says Krithika post the performance. She is unfazed by criticism or praise and is only looking ahead on what is next. ‘’Dreams need not be logical,’’ she adds,’’ because this production is all about dreams of different people at different points in time. The way I see it is that at the core of all dreams is the self, the inner part which according to me is linked to Shiva.’’

Which sets the base for the person that she is– spiritual and accepting of what life has to offer. And life has been a mixed mag for her with several road blocks, but none of which has stopped her from doing what she wants. A demanding career that involves crazy working hours, a two hour dancing practice schedule every morning , chanting and reading spiritual books every single day, writing ( because it is cathartic), planning and coordinating dance productions( Namargam, Antaram( with Suhasini Mani Ratnam, Gopika Varma and Yamini Reddy) and now Swappnam) , rehearsing for solo performances ,looking after a spectacularly beautiful home, a son who is now 15 and a husband who is into real estate and contruction,an  extended family of parents sister, in laws, large circle of friends … the list seems endless. Yet she manages it all and I ask how?

‘’I have learnt to compartmentalize. When I am here, I am fully here. I am focused on the task on hand. When I am at home I am 100 percent attentive to how it is run, how things are placed and how the food is being done and what kind of attention my husband and son need. I don’t ever give up on any activity; I just reschedule. I don’t sleep much so that gives me time to do everything I want to do.’’

‘’I am very spiritual–I chant, I do a lot of research and I read a lot about my work and about philosophy. And in that process of educating myself I wrote my script on Shiva and on Shaivasim.’’And this line of spiritualism has been with her since she was very young- ‘’11 maybe 12,’’ she says. ‘’I used to chant since then and people have found it strange. ‘’ Krithika comes from a family of Theosophists. ’My grandfather was one and so is my father, who is also a poet. Those days– though they were those traditional families, they used to have teas with sandwiches and stuff and they came from Burma. I grew up like that and while my mother was from Bangalore she was utterly devoted to Raghavendra Swamy.’’

Krithika started learning dance from Dr Prof Sudharani Raghupathy and spent her early years in the dance school, Shree Bharatalaya. ‘My mother and Sudha Aunty used to be neighbors in Bangalore and when I was born she was determined that I should learn from her, ’says Krithika. That laid the foundation to all that she is doing today, because her first spiritual Guru is Shri Madurai Krishna Iyengar who used to teach her mother music and became her guiding light in all these years. ‘’ Vadyar and Sudha Aunty are my gurus and there is a connection I cannot explain. I do what my gurus tell me and while Vadhyar is no more physically I communicate with him and find ways of fulfilling what I need to. All the chanting has helped me to shape my life too and I have and am always coming in contact with people who are deeply spiritual.’’

She narrates an interesting story of how her father once took her to see one such person before her arangetram. He materialized an apple out of his navel and gave it to her to eat. ‘’ I am very OCD kind of a person,’’ she says with a laugh-‘’ obsessing about cleanliness and being particular about everything and I remember wondering how I was going to eat that fruit. The holy person read my mind and said,’’I know what you are thinking- but you cannot wash the fruit. You have to eat it the way it is. I also remember taking it home and looking at it for a long time. But ate I did and from then I changed the way I thought. I had to conquer my OCD and realized how crippling it is to be like that. After that my experiences at going to temples changed too, because earlier I couldn’t take the mud, the dust and other damp areas that could be there. A change in me opened up my very thinking.’’

However it was when she had a child that her life changed in an indescribable manner as she had a difficult pregnancy and almost died during childbirth. ‘’ I went out of my body and I saw everyone from above. The experience was very much like how it is described by many- the light, the tunnel and the lightness. But I also knew I that I wanted to come back. I felt I had many more things to complete and I wanted to be alive for my baby. I can say it was my Guru who brought me back.’’

With that experience, Krithika says,’’ I developed a completely different view of life. I stopped worrying so much. I don’t stress. If things don’t go my way, I don’t allow myself to get worked up. I plan and if they don’t turn out well I look at solutions and alternatives instead of worrying why they didn’t work. I just move on –just as I don’t think of the negatives in my life. And there are many.’’

‘’I was on the ventilator and in the ICU –but in my mind, I was chanting all the time. That’s why I named my son Shriman. I accept everything as an act of God’’

Krithika came back to dance after a hiatus of close to 15 years. ‘’And it does not feel that I ever left,’’ she says. ‘’I don’t waste time on frivolity and give attention to whatever I am doing. Whether it is a party or designing a building, there are no half measures. I think it helped my marriage to stop dancing, which is probably why I gave it up then. Now my son is old enough and the family is also supportive in what I want to do with dance now’’

It started with master classes with her Guru Sudharani Raghupathi,’’ and she was so good with me. I would go every afternoon for close to 5 months and have a one on one with her. She brought me back. And even though I went away from it I remembered – I have a photographic memory which helps in my work as well as n dance. This quality of instant recall just kicked in. Plus I do power yoga, have a personal trainer and I dance every day—all this helps.’’

‘’The biggest challenge while getting back to dance is in the area of abhinaya,’’ she says. ‘’Because being in the corporate world for so long ,one learns to have an impassive face and not let the other person know what you are thinking. This is a handicap when it comes to dance. Without expression your dance is only half of it.’’

Krithika believes that sometimes dance can become like a phobia for those who think they cannot understand it. And this happens only with the classical dance or music. ‘’In the west a rock artist is most likely to catch an opera or an architect will probably play the cello. They tend to be pluralistic with themselves and therefore have a pluralistic view of others too. But I feel here we tend to compartmentalize ourselves so much that our identity seems almost cast in iron.  People are scared to be something else. Explore other sides to themselves. Also people probably do not internalize sufficiently what they do’’

‘’People especially women,’’ she sums up,’’ should not put limitations on themselves. I believe everyone should dream and be what they want to be- there should be no stopping themselves. No dream is too big or too impossible. Isn’t that what life coaches say? Plus, do receive Grace with Grace, whether good or bad. That’s all.’’

Frittata

Frittata is an egg-based Italian dish similar to an omelette or crustless quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta. Here’s a healthy and quickie version to one.

Corn and Spinach muffin frittatas

Ingredients

(Yields 8 mini frittatas):

6 large eggs

1/3 cup heavy cream

3 slices of meat of your choice, roughly chopped

a handful of baby spinach, briefly chopped

1/4 cup frozen corn

1/3 cup shredded cheese of your choice

Salt and pepper to taste

Directions:

Preheat oven to 350F. Grease muffin tin or line with muffin liners.

In a large bowl, mix together eggs and cream until well combined.

Add remaining ingredients and mix well.

Spoon batter into the prepared muffin tin, about 3/4 full. Transfer muffin tin to oven and bake for 18 to 20 minutes. Transfer muffin tin to a wire rack and let cool completely.

Use a pairing knife to run around the edges of the frittatas to release them from the muffin tin.

The frittatas can be frozen up to a month. Reheat in microwave before serving.

Blueberry Banana Spelt Muffins

Blueberry Banana Spelt Muffins (vegan + refined sugar free)

Delightful, healthy banana blueberry walnut muffins made with spelt flour so they are naturally wheat-free. If you aren’t a fan of blueberries, you can swap it with strawberries, cherries or prunes and dates. You can also leave out the walnuts and swap the almond milk for coconut milk if you’d like a nut-free version.

YIELDS – 12 LARGE MUFFINS

PREP TIME – 20 MINUTES

COOK TIME – 25 MINUTES

Ingredients:

3/4 cup mashed ripe banana (about 2 medium)

3/4 cup + 2 tablespoons unsweetened almond milk

1 teaspoon apple cider vinegar

1/4 cup pure maple syrup or honey

1 teaspoon pure vanilla extract

1/4 cup coconut oil, melted

2 cups light spelt flour (or plain flour or almond meal)

6 tablespoons coconut sugar (or natural cane sugar or jaggery)

2 teaspoons baking powder

1.5 teaspoons cinnamon

1/2 tsp fine grain sea salt

1/2 tsp baking soda

1/2 cup chopped walnut pieces

1 cup frozen or fresh blueberries (see note)

Directions:

Preheat oven to 350F and grease a muffin tin.

In a medium bowl, mash bananas and measure out 3/4 cup. If you have any leftover mashed banana you can freeze it for a smoothie.

Place mashed banana into medium bowl along with the milk, vinegar, maple syrup, and vanilla. No need to stir it yet.

Melt the coconut oil in a small pot over low heat. Set aside.

In a large bowl, mix together the dry ingredients (flour, sugar, baking powder, cinnamon, salt, and baking soda).

Stir coconut oil into the wet mixture. Pour wet ingredients onto the dry ingredients and stir until just combined. Do not overmix as spelt is a fragile little flour.

Gently fold in the walnuts and then the blueberries, being sure not to overmix as this can result in dense muffins.

Spoon about a heaping 1/4 cup of batter into each muffin tin, filling each tin about 3/4 full (they will seem very full, but this is normal!) I like to press a few extra blueberries on top of each so they look pretty after baking.

Bake at 350F for 23-27 minutes until a toothpick comes out clean. I baked them for 25 minutes.

Cool in pan for 5-8 minutes and then transfer muffins to a cooling rack and cool for another 15 minutes.

Note: If using frozen blueberries, be sure to leave them in the freezer (do not thaw) until just before you stir them into the batter. This helps prevent bleeding.

She has an impeccable style of dressing and surely makes heads turn when she dresses up. She has a passion for fashion and an inimitable style too. This was reflected in the way she was dressed up for the interview – formal yet elegantly. An avid blogger who blogs mostly on fashion, she had her own clothes label for a short time which did rather well. Armed with degrees in Business Management (Case Western Reserve University and Fashion (Parsons School of Design, New York), Priyanka Chigurupati is now involved totally with the family business in pharmaceuticals. After making a mark in fashion, this young girl is raring to do so in pharmaceuticals says Radhika Rajamani.

Chic-Style

While Priyanka was pursuing her Business Management degree her exposure to fashion was tremendous. “I used to shop a lot in the United States even before I began my education. Living in the US was different. There was a lot of media exposure and I could shop a lot. Subsequently I went to Parsons School in New York which is a living, breathing and eating fashion city.” Priyanka started a style blog as a hobby. After finishing her education in 2012 she came back to India and pondered about what to do. Then she joined the family business of pharmaceuticals and worked for about nine months. Even though she was travelling in that period to Latin America she was not too happy and she quit it to take up fashion.

Priyanka admits she is a big shopaholic. She used to buy a lot of stuff in the US.  “There were no places in Hyderabad where I could shop. Then I started my own label. For a year and a half it was amazing. People responded to my clothes well.” She made primarily Western and Indo-Western for the women aged between 18 and 30. Her marketing strategies were good. Her short videos on various thematic aspects of fashion are still available on the Net. She operated online (UniqueStyle11.com) as well as out of a studio. After one and a half years she thought about the long term prospects in fashion. “I had the feeling of independence. Fashion is one of the most hardest and difficult industries. It takes a while to mark a mark.” About four and a half months back I decided to get back to my family business also with a bit of advice from my father. So I have to start from scratch and commit myself to pharmaceuticals. I am into business development. There is a lot to learn here.”

Even now Priyanka continues to blog regularly and posts pictures. I can’t run a label on half time. So I keep myself updated on fashion by reading. I help in styling some of my friends. Priyanka is really fond of dressing up so she attends parties on weekends. Being busy at work these days, she shops mostly online. She has a big craving for shoes and believe it or not her collection runs into some two hundred plus!

With a figure to die for it’s natural that Priyanka works out rigorously to maintain it every day. Also having parents who are marathon runners has helped. Exercise and healthy food are part of her life. “I realised diet is 70 per cent and workout is 30 per cent. Besides working out at home, spending many hours in the office Priyanka browses online watches a lot of TV shows and reads fiction when she can. She doesn’t run marathons like her parents but has participated in some runs and half marathons. “I have weak knees and I am not that kind of a person who will put in the effort for marathons.”

Having inspiring parents who supported her in fashion and are doing so now too Priyanka is learning the ropes in pharmaceuticals and it is just a matter of time that she will carve her own space there too like she did in fashion. “I will hopefully make a difference to the company.”
