Fried Egg Wraps

  • Whole wheat – 1 cup
  • All purpose flour- ¼ cup
  • Yoghurt – 2 tbsp
  • Oil- 1 tbsp
  • Salt- a pinch
  • Water- as needed to knead
  • Sesame seeds – optional , about 1 tsp
  • Eggs : 1 per wrap
  • For the Garlic blistered tomatoes:
  • Tomatoes – 2
  • Garlic cloves – 4 , smashed
  • Olive oil to rub on the tomatoes
  • Garlic salt- acc to taste
  • Smoked Paprika – acc to taste. Can sub with red chillie powder/ chillie flakes if you dont have smoked paprika.
  • Toppings:
  • Cucumber – 1, peeled and cut into match sticks
  • Carrot -1 , peeled and cut into match sticks (i usually grate it)
  • Onions – 1, thin slices
  • Coriander – ½ cup or more, as desired
  • Accompaniments:
  • Mint Mayo – as needed
  • Hot & sweet tomato ketchup – as needed
  • Sriracha – a dash
  • Black pepper
  • Salt
  • Lemon Juice , from 2 lemons (depending on how sour you like it and the size of your lemons)

  1. Start by making the dough. Mix the flours in a mixing bowl, make a hole in the centre, add the yoghurt and oil and mix, Slowly add the salt, sesame seeds and water as required to knead.
  2. Knead for atleast 5 mins till smooth and soft. Cover with a damp towel and set aside for 15 mins. You can do this the previous night also, just remember to bring the dough out a good 30 min before you start.
  3. Next, rub some olive oil on tomatoes, smash the garlic, and roast it in a pan or naked flame. Keep aside, let cool for 2 mins , then cut into four rings per tomato.
  4. For the topping:
  5. Put all the veggies in a bowl, add some lemon juice, salt and pepper. Toss, keep it aside.
  6. For the fried egg:
  7. Heat a pan, add just a tsp of oil. Once the oil gets hot, but not too hot, crack the egg carefully into the pan. Make sure the yolk stays in place. Sprinkle some salt, pepper and smoked paprika on the egg. Fry for 2-3 mins or till it reaches desired doneness.
  8. For the tortillas:
  9. Roll out the tortillas thin and about 3-4 inch diameter . Keep the remaining dough covered while rolling out.
  10. Heat a girdle, fry a tortilla on one side, flip, pour a little oil and let it cook for 30 sec. Flip, fry for another 30 secs and remove. Keep aside in a roti basket or aluminium foil.
  11. To assemble:
  12. Take a tortilla, Spread some hot and sweet tomato ketchup on it, add some mint mayo. Place the Fried egg, roasted tomatoes and pile on the fresh veggies. Dress with some fresh coriander , squeeze of lime juice and a dash of Sriracha. Roll up in half like a soft shell taco and serve hot!!!
