Each of the dishes at Alba, the signature Italian fine dining  restaurant at JW Marriott, Bengaluru is thoughtfully curated and prepapred by the aegis hands of seasoned Chef Eliyaz who comes with an extensive experience of a decade’s experience in the industry. An expert in Italian cooking, he ensures the balance of flavours in each of Italy’s most celebrated dishes while maintaining international Marriott culinary standards to perfection.
Indulge in an all-new menu at Alba, besides the best of Italian and Tuscan flavours of pizzas and pastas. Satiate your taste buds with a scrumptious plethora of antipasti, salads and cold cuts, homemade pastas, main course and desserts – all handcrafted by Chef Mohammed Eliyaz. The freshly curated menu includes an array of exotic offerings like Trio of Calamari, Grilled Prawn Provencale, Seared Goat Milk Cheese Salad, Farmer Style Cacciucco, Chicken Tortellaci, Porcini Cream Sauce, Beetroot and Chestnut Risotto, Asparagus and Leeks Crespella, Norwegian Salmon, 36 Hours Cooked Pork Belly, Black Chicken, Honey Nut Crunch Gelato and the Granny Smith and the Rocket leaf Sorbet, among other signature dishes.
I begin my lunch with the Quinoa and Puy Lentil made with Haricot beans and Italian lemon jelly, with vanilla froth on the side adding that hint of fun, freshness and art on the plate. Adding to the long list of must-tries are Asparagus Salad and Minestrone Genovese. I loved the White Onion and Porcini Soup with Olive Powder Crispy Herbs. I loved the crunchy texture and was informed that it was prepared with caramelised white onions cooked alongwith the porcini mushrooms and blended and paired with kalamata olive powders and crispy herbs and shock fried that gave the soup that crunchy texture. If you’re a sea food lover, do try the Home Made Whole Wheat Fettuccine and Prawns, for its subtle classic Italian flavours. For the mains, the Grilled Sea Bass cooked in Acqua Pazza sauce that has a hint of oregano, olives, capers and served like a thick stew with asparagus on top, hit the right spot. Also, try the Norwegian Salmon for its fresh taste with hint of cauliflower cream that adds to the flavours alongside orange glaze and crispy mash. Vegetarians will love the Red Pumpkin and Zucchini made from pumpkin flan and green zucchini cream or the Asparagus and Leeks Crespella which is rye flour crepes with herb béchamel. Take your pick of desserts from the classic Dolci options of a Pannacotta with basil and cacao sponge, Banoffee Pie or a Classical Tiramisu and Belgian Dark Chocolate Gelato.
I loved the simple flavours that come with refined cooking for each of the dishes. Every dish on this new menu is flavourful, boasts of textures that are just right and leaves your taste buds craving for more.
