The Residency presents Andhra Food Festival at Spice Jar Multi Cuisine buffet restaurant from Thursday 19th to Sunday 29th January 2017. Lunch & Dinner Buffet available on all days. It’s time to tickle your taste buds with the best of fiery regional Indian cuisines! Indulge in sumptuous food from the spiciest region in the country. Chef Srinivasa Rao, our consultant chef will entice your palate by cooking up some authentic and mouth-watering delicacies such as Chepala Pulusu – fish in tangy sauce, Thottakura Mamsam – mutton with amaranth leaves, Warangal Kodi Kura – the Andhra version of pepper chicken and the famous Andhra chicken pulao, using a host of authentic spices to bring in the distinctive and inimitable flavor.

The live counter serves pesarattu – a dosa made with green gram with diced onions as a filling & served with ginger chutney; also the perugu vadulu is a different vada preparation sincec the vada is not soaked in water but directly into beaten curd. The Andhra Chili Chicken lives up to its name, tossed in chili paste and served piping hot. The Peethala charu has a fine balance of crab & pepper flavors in a thin appetizing soup.

The vegetarian selections offer a wide repertoire of choices  such as mungakai pilusu – drumstick in red sauce, bangala vepudu – stir fried potatoes, dondakaya kobari – gherkins cooked with coconut, mamadikaya pappu – lentils infused with mango & the all time favorite pulihora – the tamarind rice

An Andhra meal is complimented by the mango pickle, podis & dosakai pachadi, the gongura chutney; combined with fragrant rice and a spoonful of ghee. Those with a sweet tooth can dig into specialties like Kobbari Pappu Paysam, Bellam Pongali, Paalakova & Gummidikaya Payasam.

Chef Srinivasa Rao was born in Srikakulam district, undivided Andhra Pradesh in 1986;his food inspiration came from the best of fiery regional Indian cuisine,  from the spiciest region in the country — Andhra !
