If you want to dig into some of the most sought after Sindhi dishes inspired from anecdotal iterations of Sindhi cuisine over the ages – past, present and future, then head to The Sindhi Pop-up at RockSalt from August 29 – September 2, 2018. The Hinduja Legacy of Sindhi Food will showcase authentic recipes recreated with a twist, yet keeping the original flavours intact to enhance the experience. Bengaluru’s food connoiseur Suresh Hinduja has brought in decades of practice and love to each of the dishes. Striking a balance between the epicurean lineage of Sindhi and Progressive Indian Cuisine at RockSalt are celebrity and award winning chef Abhijit Saha and noted gourmand Suresh Hinduja who have come together to create this unique Pop-up featuring lost recipes from Sindhi cuisine. Relish the heirloom recipes as he pays homage to the smorgasbord of amazing flavours of his childhood spent in his grandmother’s kitchen every summer. At the Pop-up, every dish is handmade and cooked with love. On the menu are Set Vegetarian and Non-Vegetarian meals that will feature dishes like Bhee-Dhingri Patata tikki, Sannah Pakoda, Sai Bhaji, Bhugga Chawaran, Sindhi Kadhi, Methi Macchi, Teewarn, Seyal Murgi, Sindhi Phulko, a variety of pickles like Aur mein Khatairn, Ghatadi/Bheendi pickle, and scrumptious desserts like meetha samosas and Thandai pudding.
The non-vegetarian Sindhi meal platter includes Keema Tikki, Methi Fish, Seyal Murghi, Teevarn Mutton, Thoom Macchi Methi, Sindhi Curry, Aloo Tuk, Moong Makhani Dal, Bhuga Chawal, Sindhi Phulka and Boondi Raita. Vegetarians can try Bhee Dhingri Tikki, Classic Daal Pakwan, Sindhi Curry, Vadi Aloo Baingan, Bhindi Basar, Aloo Tuk, Sai Bhaji, Moong Makhani Dal, Bhuga Chawal, Koki Paratha and Dahi and Meetha Samosa stuffed with khoya, pista and badam halwa bits and Thandai pudding for dessert. Wash it all down with a specially created drink for the Sindhi Pop-up called Shiela Kijwani, with flavours of sandalwood and saffron. Also available will be an A-la-carte menu featuring key Sindhi dishes, as well as dishes from the regular menu of RockSalt.
