Spice up your mundane and drab Wednesdays with the nourishing Palak Khichdi. It’s super easy to make and is healthy, nutritious and light on the stomach. Here’s our quick recipe for this mouth-watering spinach-lentil-rice combo:
Ingredients – 1 tsp ghee, 1 tbsp oil, 1 onion, 1 tomato, 4-5 cloves, 1 bunch of fresh spinach, salt, 1-2 dried red chillies, 1 tsp turmeric, 1 cup raw rice, ½ cup split green moong, ¼ cup yellow moong dal
Method: wash and pressure cook the rice, green and yellow moong dals. In a pan, heat oil, add cloves, red chillies, onions and sauté. Then add chopped spinach which has been washed thoroughly. Sauté till spinach is cooked, post which add tomatoes and turmeric and mix well. Now added the cooked rice-dal combo and a little water and cook for another 3 minutes. Add salt and combine. Serve hot with a small dollop of ghee. This one-pot meal can be relished with curd and papad.
