Food connoisseurs put their chef’s hats on as star Chef Michael Swamy and executive Chef Sudhir Nair kickstarted the culinary expedition at Fairfield by Marriott, Outer Ring Road recently. They spread the aromas from the spice land, sharing some healthy culinary secrets and embodied the brand’s philosophy of healthy living with great food.

At Fairfield by Marriott Outer Ring Road, the afternoon began with Executive Chef Sudhir Nair and culinary Master Chef Michael Swamy, preparing healthy creations from Chef Nair’s native region Kerala. While Chef Michael Swamy recreated the Keralan magic as he put together a delectable lamb encrusted curry, a traditional desert was created by Chef Sudhir in the form of Parripu Pradhaman. Further to this, both the chefs combined their expertise and co-created a healthy version of ‘Akki Roti’ using local ingredients. The second master class at Fairfield by Marriott Rajajinagar saw Chef Swamy along with the Executive Chef Aniket Das trace back to their childhood by rustling up some flavours from the Malvan region. Chef Aniket Das recreated his favourite childhood memory by preparing the famous Moong Sprout Ussal while Chef Michael Swamy added his special touch to the Malvani aromas as he prepared the ‘Chinchoni Curry’.
