Cocoatrait offers, 1st time in India, Chocolate Taster Certifications in collaboration with IICCT, London!
With an aim of spreading knowledge about fine chocolates, formalizing the chocolate tasting education in India and establishing India in the global fine flavor map, Cocoatrait has collaborated with the International Institute of Chocolate and Cacao Tasting, London (IICCT) and announced the Level 1&2 of the chocolate taster’s certification in India in June 2018. IICCT currently offers the certification in 7 countries across the globe including United Kingdom, USA, Italy, Netherlands, Denmark, Hong Kong and Taiwan.

This certification course will propel and equip chocolate makers in India to increase the quality in their offering once they understand the flavour nuances of fine cacao and chocolate and help consumers achieve a better understanding of the new world of craft fine chocolate. This course is most beneficial to Chocolatiers, Bakers, Patisserie Chefs, Startups, Entrepreneurs or Chocolate enthusiasts as it helps them differentiate the good from the bad and train on sensory analysis. “We see this collaboration as a giant step forward in bringing India at par with what is currently occurring globally” confides Martin.
Students who take the Level 1 Certificate in Chocolate Tasting Course will learn how to taste origin chocolate bars and will develop an understanding of how cacao is grown and processed, how chocolate is made and how to identify positive and negative notes in fine cacao and chocolate. The Level 1 is a 1 day classroom session and sets the foundation for the next 2 levels of certification. The Level 2 is also being offered and is a 3 day classroom session. Among other tools, we shall be using the below Chocolate Flavour Map during the sessions.
The dates for Level 1 & 2 are from 22nd to 25th June 2018 and priced the same as the global process at Rs 54000 for both the levels together. The level 1 individually is priced at Rs 14000 and are both to be held in Chennai.
