Kendall College and ITC Grand Chola, Chennai hosted A Culinary Arts Master Class led by Kendall Chef Christopher Koetke and ITC Grand Chola Senior Executive Chef Ajit Bangera

Kendall College, a leading culinary arts school in Chicago, Illinois, USA and ITC Grand Chola, Chennai held a master class at ITC Grand Chola on 15 September 2015, which was hosted by renowned international Chef Christopher Koetke, the vice president of School of Culinary Arts at Kendall College to generate awareness about culinary arts education and the many career opportunities it presents to students.

Chef Koetke, who is on a week-long visit to India, walked the participants through the preparation of roasted tournedos of salmon with red wine sauce, mushroom snail ragout, salmon sausage, and succotash salad.

“It is a pleasure and a privilege to spend time in India and to have the opportunity to engage with the people of this country,” said Chef Koetke. “I am proud to lead the Kendall College faculty as an advocate for the importance of quality culinary arts education. At Kendall, we believe it is vital that students who are interested in culinary arts careers have the support they need to achieve their dreams.”

Chef Koetke has been involved in the advancement of sustainable practices in the food service industry at Kendall for several years. Beginning in 2005,the school developed a robust sustainability curriculum and guiding principles that are integral to both its educational programs and operational practices, addressing everything from composting and recycling to organic ingredients.

“It is a pleasure to have Chef Koetke at ITC Grand Chola. If there is one thing in the world that can bring a smile in someone’s face, it is good food and awareness class like this, which enhances the whole experience for students,” said Ajith Bangera, a senior executive chef at ITC Grand Chola.

ITC Limited launched the ITC Grand Chola, a luxury hotel in Chennai, on 15 September.
